What you need
- 1 medium onion, sliced
- 1 medium carrot, sliced
- 1 small celery stalk with leaves, sliced
- 1 clove garlic
- 1/2 cup water
- 2 cups cooked broccoli, coarsely chopped
- 1 teaspoon salt
- A generous pinch of cayenne
- 1/2 cup cooked macaroni
- 1 cup organic chicken broth
- 1/2 cup heavy cream
- Sour cream
What you do
Simmer, covered, the onion, carrot, celery, and the garlic in the water for 10 minutes. Transfer to container of blender or food processor; add broccoli, salt, cayenne, and macaroni. Cover and turn motor to high. Blend. Add stock and cream. Blend again. Serve with sour cream, if desired.
