Farmer's Market Salsa
From Farmer Tim's family cookbook
What you need
- 40 tomatoes, blanched and peeled
- 5 medium red onions
- 1 whole bulb garlic
- 1 tsp. oregano
- 2 Tbsp. parsley
- 4 green peppers
- 1 tsp. fresh basil
- 2 tsp. dried basil
- 1 Tbsp. vinegar
- 2 Tbsp. port wine
- 1/4 cup chopped tomatillo
- 1 pablo chile
- Salt and pepper to taste
What you do
Combine all in a large sauce pan or stock pot. Cook over low heat for several hours, until desired consistency is reached. May be canned for future use.
Yields 8 to 12 pints
