Melon Salsa
Here is a good recipe if you want to try something a little different with your melons.
Ingredients
- 1 Medium sized cantaloupe, honeydew, or watermelon
- 1 Red Bell Pepper
- 1 Small Jalapeno Pepper
- 1/2 Medium Red Onion
- 1/4 Cup mint leaves (1/8 cup if dried)
- 1-2 Tablespoons Honey
- 2 Tablespoons vinegar
Preparation
Cut melons into 1/4 inch cubes. If using watermelon try to use the less seedy area toward the rind. Chop peppers and finely mince onion and mint. Toss with honey and vinegar, allow to sit at least one hour before serving. Serve over grilled fish, meats, vegetable kabobs, or in the place of regular salsa.
